There were some really good series of books when I was a kid in the 90's and this one called the Bailey School Kids was a collection of short novels for kids ages 6-10 that each featured a different "monster" or mythical creature posing as a teacher at their school. Obviously right up my alley. There are many books in the series (over 50 + special edition ones) but these are the ones I remember reading:
